Bamieh
A savory Middle Eastern stew made with tender beef cubes and okra simmered in a garlic-infused tomato broth.
Ingredients
- 1 lb beef chuck stew meat, cubed
- 1 lb baby okra, trimmed
- 2 tbsp olive oil
- 1 yellow onion, diced
- 6 garlic cloves, minced
- 3 tbsp tomato paste
- 2 cups crushed tomatoes
- 3 cups beef broth
- 1 tsp ground coriander
- 2 tbsp fresh lemon juice
- 1/4 cup fresh cilantro, chopped
- 1 tsp salt

Heat 2 tbsp olive oil in a large pot over medium-high heat.

Add 1 lb cubed beef chuck stew meat and sear until browned on all sides, about 6 minutes.

Stir in 1 diced yellow onion and half of the 6 minced garlic cloves, cooking for 4 minutes until softened.

Add 1 tsp ground coriander, 3 tbsp tomato paste, 2 cups crushed tomatoes, 3 cups beef broth, and 1 tsp salt.

Cover and simmer on low heat for 45 minutes until the beef is tender and internal temperature reaches at least 160F.

Add 1 lb trimmed baby okra, 2 tbsp fresh lemon juice, remaining garlic, and 1/4 cup chopped fresh cilantro to the pot.

Simmer uncovered for 15 minutes until the baby okra is tender.
