Spaetzle
Tender, egg-rich German egg noodles boiled until fluffy and sauteed in golden butter.
Ingredients
- 2 cups all-purpose flour
- 3 large eggs, beaten
- 1/2 cup whole milk
- 1 tsp fine salt
- 1/4 tsp ground nutmeg
- 3 tbsp unsalted butter
- 2 tbsp fresh parsley, chopped

In a large bowl, whisk together 2 cups all-purpose flour, 1 tsp fine salt, and 1/4 tsp ground nutmeg.

Whisk in 3 beaten large eggs and 1/2 cup whole milk until a smooth, sticky batter forms, then let it rest for 10 minutes.

Bring a large pot of salted water to a rolling boil over high heat.

Press the batter through a spaetzle maker or colander into the boiling water and cook for 2 to 3 minutes until noodles float.

Scoop noodles out with a slotted spoon and drain well.

Melt 3 tbsp unsalted butter in a large skillet over medium-high heat, add cooked noodles, and toss for 2 minutes until lightly golden.

Garnish with 2 tbsp chopped fresh parsley and serve warm.
