Blini with Smoked Salmon
Tender buckwheat yeast pancakes topped with rich creme fraiche and savory smoked salmon. An elegant classic bite for gatherings and celebrations.
Ingredients
- 2 tsp active dry yeast
- 1 cup whole milk, warmed
- 1/2 cup buckwheat flour
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1 large egg, beaten
- 2 tbsp unsalted butter, melted
- 1/2 cup creme fraiche
- 8 oz smoked salmon, sliced
- 2 tbsp fresh dill, chopped

In a bowl, dissolve 2 tsp active dry yeast in 1 cup warmed whole milk and let sit for 5 minutes until foamy.

Whisk together 1/2 cup buckwheat flour, 1/2 cup all-purpose flour, and 1/2 tsp salt in a medium bowl.

Whisk 1 beaten large egg and 2 tbsp melted unsalted butter into the yeast mixture, then stir into the dry ingredients to form a smooth batter.

Cover the batter and let rise in a warm place for 30 minutes until bubbly.

Heat a nonstick skillet over medium heat, drop small spoonfuls of batter, and cook 1 to 2 minutes per side until golden.

Top warm blini with 1/2 cup creme fraiche, 8 oz sliced smoked salmon, and 2 tbsp chopped fresh dill before serving.
