Boiled Potatoes with Dill
Tender boiled young potatoes tossed with rich melted butter and fresh fragrant dill. A simple and classic side dish enjoyed across Eastern Europe.
Ingredients
- 2 lbs baby yellow potatoes, halved
- 1 tbsp fine sea salt
- 3 tbsp unsalted butter, cubed
- 1/4 cup fresh dill, chopped
- 1/4 tsp black pepper

Place 2 lbs halved baby yellow potatoes in a large pot and cover with cold water by 1 inch.

Add half of the 1 tbsp fine sea salt to the pot and bring to a boil over high heat.

Reduce heat to medium and simmer for 15 minutes until fork-tender, then drain completely.

Return potatoes to the warm pot and add 3 tbsp cubed unsalted butter, 1/4 cup chopped fresh dill, 1/4 tsp black pepper, and remaining fine sea salt.

Gently toss until butter is melted and potatoes are evenly coated.
