Sambal Tomat
A traditional Indonesian chili paste cooked with fresh tomatoes, shallots, and garlic. It delivers a balanced sweet, tangy, and spicy flavor profile.
Ingredients
- 2 cups Roma tomatoes, chopped
- 6 large red chilies, sliced
- 4 bird's eye chilies, stemmed
- 4 shallots, peeled
- 2 garlic cloves, peeled
- 2 tbsp vegetable oil
- 2 tsp palm sugar, grated
- 1/2 tsp salt
- 1 tsp lime juice, fresh

Heat 2 tbsp vegetable oil in a skillet over medium heat.

Add 2 cups chopped Roma tomatoes, 6 sliced large red chilies, 4 stemmed bird's eye chilies, 4 peeled shallots, and 2 peeled garlic cloves to the pan.

Sauté for 8 to 10 minutes until the vegetables soften and blister.

Transfer the cooked vegetables to a mortar or food processor and grind into a coarse paste.

Return the paste to the skillet, then stir in 2 tsp grated palm sugar and 1/2 tsp salt.

Cook for another 3 to 5 minutes until the oil separates from the paste.

Remove from heat and stir in 1 tsp fresh lime juice before serving.
