Callaloo
A rich leafy green stew simmered with coconut milk, okra, calabaza pumpkin, and fresh herbs.
Ingredients
- 1 lb callaloo greens, chopped
- 1 cup okra, sliced
- 1 cup calabaza pumpkin, diced
- 1.5 cups unsweetened coconut milk
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 4 scallions, chopped
- 4 fresh thyme sprigs
- 1 scotch bonnet pepper, whole
- 1 cup vegetable broth
- 1 tsp salt

Sauté 1 diced yellow onion, 4 minced garlic cloves, and 4 chopped scallions in a large pot over medium heat for 3 minutes until softened.

Add 1 cup diced calabaza pumpkin, 1 cup sliced okra, and 1 lb chopped callaloo greens to the pot.

Pour in 1.5 cups unsweetened coconut milk and 1 cup vegetable broth, then stir in 4 fresh thyme sprigs, 1 tsp salt, and the intact 1 whole scotch bonnet pepper.

Bring to a gentle simmer, cover, and cook for 25 minutes until the vegetables are tender.

Remove and discard thyme and scotch bonnet, then whisk or blend the stew until smooth before serving.
