Cassava Pone
A rich and chewy spiced bake made with fresh grated cassava, coconut, and pumpkin. Warmly spiced with ginger, cinnamon, and nutmeg for a dense sweet treat.
Ingredients
- 4 cups cassava, peeled, grated
- 1 cup fresh coconut, grated
- 1 cup calabaza pumpkin, grated
- 1 cup brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp fresh ginger, finely grated
- 1/2 tsp salt
- 1 cup coconut milk
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract

Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.

In a large bowl, combine 4 cups peeled, grated cassava, 1 cup grated fresh coconut, and 1 cup grated calabaza pumpkin.

Stir in 1 cup brown sugar, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg, 1 tsp finely grated fresh ginger, and 1/2 tsp salt.

Pour in 1 cup coconut milk, 1/4 cup melted unsalted butter, and 1 tsp vanilla extract, then stir thoroughly until a dense batter forms.

Transfer the mixture to the prepared baking dish and smooth the top with a spatula.
