Carrot Raisin Salad
A classic American deli-style salad of shredded carrots and plump raisins bound in a sweet, tangy mayonnaise dressing. Quick to prepare and best served chilled.
Ingredients
- 1 lb carrots, peeled, shredded
- 1/2 cup raisins
- 1/4 cup mayonnaise
- 2 tbsp pineapple juice (or fresh orange juice)
- 2 tsp apple cider vinegar
- 2 tsp honey
- 1/4 tsp salt
- 1/4 tsp black pepper, freshly ground

Place 1/2 cup raisins in a small bowl and cover with warm water. Let soak for 5 minutes to plump, then drain well.

In a large bowl, whisk together 1/4 cup mayonnaise, 2 tbsp pineapple juice (or fresh orange juice), 2 tsp apple cider vinegar, and 2 tsp honey until smooth. Season with 1/4 tsp salt and 1/4 tsp freshly ground black pepper.

Add 1 lb peeled, shredded carrots and the drained raisins to the dressing. Toss until everything is evenly coated.

Taste and adjust seasoning. Refrigerate for at least 15 minutes before serving to let the flavors meld.
