  • 1 lb carrots, peeled, shredded
  • 1/2 cup raisins
  • 1/4 cup mayonnaise
  • 2 tbsp pineapple juice (or fresh orange juice)
  • 2 tsp apple cider vinegar
  • 2 tsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper, freshly ground

    Place 1/2 cup raisins in a small bowl and cover with warm water. Let soak for 5 minutes to plump, then drain well.

    In a large bowl, whisk together 1/4 cup mayonnaise, 2 tbsp pineapple juice (or fresh orange juice), 2 tsp apple cider vinegar, and 2 tsp honey until smooth. Season with 1/4 tsp salt and 1/4 tsp freshly ground black pepper.

    Add 1 lb peeled, shredded carrots and the drained raisins to the dressing. Toss until everything is evenly coated.
