Chorbat Adas
A comforting Middle Eastern red lentil soup simmered with warm cumin and finished with fresh lemon juice.
Ingredients
- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 1 cup carrots, diced
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 tsp salt
- 2 tbsp lemon juice

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 medium diced yellow onion, 1 cup diced carrots, and 4 minced garlic cloves, sautéing for 5 minutes until softened.

Stir in 2 tsp ground cumin and cook for 1 minute until fragrant.

Add 1 cup rinsed red lentils, 4 cups vegetable broth, and 1 tsp salt, then bring the liquid to a boil.

Reduce heat to low, cover the pot, and simmer for 20 minutes until the lentils are completely tender.

Puree the soup until smooth using a blender, then stir in 2 tbsp lemon juice before serving.
