Ingredients

  • 1 cup boiling water
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 cup English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup flat-leaf parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1/2 tsp fine sea salt

Instructions

    Place 1 cup dry couscous in a heatproof bowl, pour in 1 cup boiling water, cover tightly, and let sit for 5 minutes.
