Cottage Cheese Cheesecake Jars
Smooth, lightly sweetened cottage cheese filling layered over a graham cracker crumble in individual jars for a creamy, high-protein cheesecake fix with no baking required. Plan ahead: chill at least 1 hour before serving.
Ingredients
- 2 cups full-fat cottage cheese
- 4 oz cream cheese, softened
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 tsp fresh lemon juice
- 6 sheets graham crackers, finely crushed
- 2 tbsp unsalted butter, melted
- 1 cup fresh mixed berries (strawberries, blueberries)

In a blender or food processor, combine 2 cups full-fat cottage cheese, 4 oz softened cream cheese, 1/4 cup honey, 1 tsp vanilla extract, and 2 tsp fresh lemon juice. Blend until completely smooth, about 1-2 minutes, scraping down the sides as needed.

In a small bowl, combine 6 sheets finely crushed graham crackers with 2 tbsp melted unsalted butter and toss until the crumbs are evenly moistened.

Divide the graham cracker mixture evenly among 4 jars or glasses, pressing lightly to form a base layer.
