Cucumber Salad
A crisp and refreshing salad featuring thinly sliced cucumbers tossed in a spicy, tangy dressing.
Ingredients
- 2 large cucumbers
- 1 tsp salt
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp chili flakes
- 1 tsp sugar
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
- 2 green onions, finely chopped
- 1 garlic clove, minced

Wash 2 large cucumbers thoroughly and cut into thin slices.

Place sliced 2 large cucumbers in a large bowl, sprinkle with 1 tsp salt, and mix well. Let sit for 10 minutes to draw out excess moisture.

In a separate bowl, whisk 2 tbsp rice vinegar, 1 tbsp soy sauce, 1 tbsp chili flakes, 1 tsp sugar, 1 tbsp sesame oil, and 1 minced garlic clove until sugar dissolves.

Drain and rinse 2 large cucumbers under cold water to reduce saltiness, then pat dry with a clean towel.

Add dressing to 2 large cucumbers and toss until evenly coated.

Sprinkle 2 finely chopped green onions and 1 tbsp sesame seeds over salad and give a final gentle toss.
