Ingredients

  • 1 lb smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 medium zucchini, sliced into half-moons
  • 1 red onion, cut into 1-inch chunks
  • 2 cups broccoli, cut into florets
  • 1 lb baby potatoes, halved or quartered if large
  • 3 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper, freshly ground
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh cilantro, chopped

Instructions

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

    If using 1 lb halved or quartered if large baby potatoes, place them on the baking sheet first and toss with 1 tablespoon of olive oil, salt, and black pepper. Roast for 10 minutes as they take longer to cook than the other vegetables.

    In a large bowl, combine 1 lb sliced into 1/2-inch rounds smoked sausage or kielbasa, 1 cut into 1-inch pieces red bell pepper, 1 cut into 1-inch pieces yellow bell pepper, 1 medium sliced into half-moons zucchini, 1 cut into 1-inch chunks red onion, and 2 cups cut into florets broccoli.

    Drizzle with remaining 3 tbsp olive oil and sprinkle with 1 tbsp Italian seasoning, 1 tsp garlic powder, 1/2 tsp paprika, 1 tsp salt, and 1/2 tsp freshly ground black pepper. Toss until everything is evenly coated.

    Add the vegetable and sausage mixture to the baking sheet with the partially cooked potatoes (if using).

    Spread everything into a single layer, ensuring the sausage pieces are distributed evenly throughout.

    Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the vegetables are tender and the sausage is browned. The internal temperature of the sausage should reach 160°F (71°C) for pork or beef sausage, or 165°F (74°C) for chicken or turkey sausage.
