Ingredients

  • 2 cups glutinous rice, soaked
  • 2 tbsp coconut oil, melted
  • 2 tbsp granulated sugar
  • 6 dried jujubes, pitted
  • 8 dried lotus seeds, cooked
  • 2 tbsp raisins
  • 2 tbsp dried cherries
  • 2 tbsp raw pumpkin seeds
  • 1/2 cup sweet red bean paste
  • 1 tbsp cornstarch
  • 1/2 cup water

Instructions

    Steam 2 cups soaked glutinous rice in a cheesecloth-lined steamer over boiling water for 30 minutes until tender.

    Transfer hot rice to a bowl, then stir in 2 tbsp melted coconut oil and 2 tbsp granulated sugar until fully incorporated.

    Grease a heatproof bowl with oil and arrange 6 pitted dried jujubes, 8 cooked dried lotus seeds, 2 tbsp raisins, 2 tbsp dried cherries, and 2 tbsp raw pumpkin seeds on the bottom in a pattern.

    Press half of the rice over the arrangement, add 1/2 cup sweet red bean paste to the center, and cover with the remaining rice.
