Grass Jelly
A traditional herbal gel dessert made from dried grass jelly herb with a cooling, mild taste. Serve chilled with simple syrup or fresh fruit.
Ingredients
- 3 oz dried grass jelly herb, rinsed
- 8 cups water
- 1/2 tsp baking soda
- 3 tbsp cornstarch
- 1/4 cup cold water

Combine 3 oz rinsed dried grass jelly herb, 8 cups water, and 1/2 tsp baking soda in a large pot.

Bring to a boil over high heat, then reduce heat and simmer uncovered for 45 minutes.

Strain the liquid through a fine-mesh sieve into a clean pot, pressing the herbs to extract liquid.

Whisk 3 tbsp cornstarch into 1/4 cup cold water in a small bowl until smooth.

Bring the strained herbal liquid back to a boil, then whisk in the cornstarch slurry.

Cook over medium heat for 3 minutes while stirring constantly until thickened.

Pour the mixture into a glass dish and chill in the refrigerator for 3 hours until set.
