Fig Preserves Cake
A dense, moist spice cake rich with warm cinnamon, nutmeg, toasted pecans, and sweet fig preserves. Perfect for autumn gatherings or traditional holiday celebrations.

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 1/2 tsp salt
- 1 cup granulated sugar
- 3/4 cup vegetable oil
- 3 large eggs, beaten
- 1/2 cup buttermilk
- 1 cup fig preserves
- 1 cup pecans, chopped
- 1 tsp vanilla extract

Preheat oven to 350 degrees Fahrenheit and grease a 9x13-inch baking pan.

Whisk together 2 cups all-purpose flour, 1 tsp baking soda, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg, 1/2 tsp ground allspice, and 1/2 tsp salt in a bowl.

In a separate large bowl, beat 1 cup granulated sugar, 3/4 cup vegetable oil, and 3 beaten large eggs until smooth.

Alternately add the dry mixture and 1/2 cup buttermilk into the wet ingredients, blending well after each addition.

Fold in 1 cup fig preserves, 1 cup chopped pecans, and 1 tsp vanilla extract until evenly distributed.
