Pumpkin Rice
A fragrant Caribbean side dish cooked with tender pumpkin, rich coconut milk, and aromatic herbs.
Ingredients
- 1 tbsp olive oil
- 1/4 cup scallions, chopped
- 2 cloves garlic, minced
- 2 cups calabaza pumpkin, peeled, diced
- 1 tsp fresh thyme leaves
- 1/2 tsp salt
- 1 cup long grain white rice, rinsed
- 1 cup lite coconut milk
- 1.5 cups low-sodium vegetable broth

Heat 1 tbsp olive oil in a medium saucepan over medium heat.

Add 1/4 cup chopped scallions and 2 cloves minced garlic, sautéing for 2 minutes until fragrant.

Stir in 2 cups peeled, diced calabaza pumpkin, 1 tsp fresh thyme leaves, and 1/2 tsp salt, cooking for 3 minutes.

Add 1 cup rinsed long grain white rice, 1 cup lite coconut milk, and 1.5 cups low-sodium vegetable broth, bringing the mixture to a boil.

Reduce heat to low, cover, and simmer for 18 minutes until rice is tender.

Remove from heat, let stand covered for 5 minutes, then fluff with a fork.
