Crab and Dumpling
Tender blue crab cooked in a savory curry coconut sauce and served with dense, chewy flat dumplings.
Ingredients
- 2 lbs blue crabs, cleaned
- 2 cups all-purpose flour
- 2/3 cup water
- 1 tsp salt
- 2 tbsp vegetable oil
- 4 garlic cloves, minced
- 4 scallions, chopped
- 6 shadow beni leaves, chopped
- 1/2 scotch bonnet pepper, minced
- 2 tbsp curry powder
- 1 can coconut milk

Mix 2 cups all-purpose flour, 1 tsp salt, and 2/3 cup water into a firm dough, then knead and roll into flat, rectangular dumplings.

Heat 2 tbsp vegetable oil in a large heavy pot over medium heat and sauté 4 minced garlic cloves, 4 chopped scallions, 6 chopped shadow beni leaves, and 1/2 minced scotch bonnet pepper for 2 minutes.

Stir in 2 tbsp curry powder and cook for 1 minute until fragrant.

Add 2 lbs cleaned blue crabs and 1 can coconut milk, stir well, cover, and cook until the internal temperature reaches 145 F, about 10 minutes.

Drop the prepared dumplings into the simmering curry liquid and cook uncovered for 8 minutes until tender.
