Ingredients

  • 1 red onion, diced
  • 4 garlic cloves, minced
  • 3 tbsp aji panca paste
  • 2 tbsp aji mirasol paste
  • 4 cups chicken broth
  • 1/4 cup roasted peanuts, crushed
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1 tsp salt

Instructions

    Heat 2 tbsp vegetable oil in a heavy pot over medium-high heat.

    Season 1 lb cubed pork shoulder with 1 tsp salt, then sear in the pot for 8 minutes until browned on all sides and internal temperature reaches 145°F.

    Transfer pork to a plate, leaving rendered oil in the pot.

    Add 1 diced red onion and 4 minced garlic cloves to the pot, sauteing for 5 minutes until softened.
