Ingredients

  • 4 slices back bacon (or thick-cut streaky bacon)
  • 4 pork breakfast sausages
  • 2 large eggs
  • 14 oz can canned baked beans in tomato sauce
  • 2 plum tomatoes (or Roma tomatoes), halved
  • 8 oz cremini or button mushrooms, sliced
  • 2 tbsp unsalted butter
  • 2 tbsp vegetable oil
  • 2 slices thick-cut white or whole-wheat bread

  • to taste black pepper, freshly ground

Instructions

    Heat a large skillet over medium heat. Add 2 tbsp vegetable oil and cook 4 pork breakfast sausages for 12-15 minutes, turning occasionally, until browned and cooked to an internal temperature of 160°F (71°C). Set aside and keep warm.

    In the same pan, fry 4 slices back bacon (or thick-cut streaky bacon) for 2-3 minutes per side until crispy and cooked to an internal temperature of 145°F (63°C). Remove and keep warm.

    Add half the 2 tbsp unsalted butter to the pan. Add 8 oz sliced cremini or button mushrooms, season with salt and freshly ground black pepper, and saute for 3-4 minutes until golden. Remove and keep warm.

    Add 2 halved plum tomatoes (or Roma tomatoes) cut-side down to the pan. Cook for 2-3 minutes until lightly charred and softened. Remove and keep warm.

    Meanwhile, warm 14 oz can canned baked beans in tomato sauce in a small saucepan over low heat, stirring occasionally.

    Add the remaining unsalted butter to the skillet over low heat. Crack in 2 large eggs and fry to your liking — sunny-side up for runny yolks, or flip for over-easy.

    Toast 2 slices thick-cut white or whole-wheat bread until golden. Plate everything together — sausages, bacon, eggs, mushrooms, tomatoes, baked beans, and toast — and serve immediately.
