Gammon and Lentil Soup
A rich and savory soup combining diced gammon with earthy brown lentils and aromatic root vegetables.
Ingredients
- 1 tbsp olive oil
- 1 yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1 lb gammon steak, diced
- 1 cup brown lentils, rinsed
- 1/2 tsp dried thyme
- 1 bay leaf
- 4 cups low-sodium chicken stock
- 1/4 tsp ground black pepper

Heat 1 tbsp olive oil in a large pot over medium heat.

Add 1 diced yellow onion, 2 diced carrots, 2 diced celery stalks, and 2 minced garlic cloves, sauteing for 5 minutes until softened.

Add 1 lb diced gammon steak and cook for 5 minutes until browned and the internal temperature reaches 145°F.

Stir in 1 cup rinsed brown lentils, 1/2 tsp dried thyme, 1 bay leaf, 1/4 tsp ground black pepper, and 4 cups low-sodium chicken stock.

Bring to a boil, reduce heat to low, cover, and simmer for 30 minutes until lentils are tender.
