Guava Duff
A traditional Bahamian dessert featuring sweet guava swirled inside soft steamed dough and finished with a rich rum sauce.
Ingredients
- 2 cups fresh guavas, diced
- 3/4 cup granulated sugar
- 2.5 cups all-purpose flour
- 2 tsp baking powder
- 1/2 cup unsalted butter, softened
- 1/2 cup whole milk
- 2 tbsp dark rum

Simmer 2 cups diced fresh guavas and half of the 3/4 cup granulated sugar in a pot for 10 minutes until tender.

Mix 2.5 cups all-purpose flour and 2 tsp baking powder in a large bowl, then rub in half of the 1/2 cup softened unsalted butter.

Add 1/2 cup whole milk to form a soft dough, then roll out flat on a floured surface.

Spread the simmered fresh guavas over dough, roll into a log, and wrap securely in parchment and foil.

Place wrapped log in a large pot of boiling water and steam for 1 hour.

Combine remaining granulated sugar, remaining unsalted butter, and 2 tbsp dark rum to make a sweet drizzle.

Slice the warm cooked log and serve with the sweet drizzle.
