Ingredients

  • 2 tbsp heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 8 bacon strips
  • 1/2 cup sharp cheddar cheese, shredded
  • 1 avocado, sliced
  • 2 green onions, sliced
  • 1 tbsp unsalted butter

Instructions

    Cook the 8 bacon strips in a large skillet over medium heat until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain, then chop or crumble into bite-sized pieces.

    In a bowl, whisk together 6 large eggs, 2 tbsp heavy cream, 1/2 tsp salt, and 1/4 tsp freshly ground black pepper until well combined.

    Pour out most of the bacon grease from the skillet, leaving about 1 tablespoon. Alternatively, wipe the skillet clean and add 1 tbsp unsalted butter.

    Reduce heat to medium-low and pour in the egg mixture. Cook gently, stirring occasionally with a spatula, until eggs are soft and creamy but fully cooked, about 3-4 minutes.
