Kefta Meatball Tagine
Warm ground beef meatballs spiced with cumin and paprika cooked in a savory tomato sauce topped with gently poached eggs.
Ingredients
- 1 lb ground beef
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 2 tbsp olive oil
- 2 cups crushed tomatoes
- 4 eggs

Mix 1 lb ground beef, half of the 1 chopped yellow onion, half of the 4 minced garlic cloves, half of the 1/4 cup chopped fresh parsley, half of the 1 tsp ground cumin, and half of the 1 tsp sweet paprika in a bowl, then shape into small meatballs.

Heat 2 tbsp olive oil in a deep skillet over medium heat, then saute the remaining yellow onion and garlic cloves until softened.

Pour in 2 cups crushed tomatoes along with the remaining ground cumin and sweet paprika, bringing sauce to a simmer.

Add meatballs to the pan, cover, and cook for 12 minutes until internal temperature reaches 160 degrees F.

Crack 4 eggs directly into the sauce, cover, and simmer for 4 minutes until whites are set.
