Moin Moin
A savory steamed bean pudding made from blended black-eyed peas, aromatic peppers, and seasonings. It yields a smooth, velvety texture that works as a side or main dish.
Ingredients
- 2 cups peeled black-eyed peas, soaked
- 1 red bell pepper, chopped
- 1 scotch bonnet pepper, stemmed
- 1 yellow onion, chopped
- 1/4 cup vegetable oil
- 1 vegetable bouillon cube, crumbled
- 1.5 cups warm water
- 1/2 tsp salt

Place 2 cups soaked peeled black-eyed peas, 1 chopped red bell pepper, 1 stemmed scotch bonnet pepper, 1 chopped yellow onion, and 1.5 cups warm water into a blender.

Blend on high speed until completely smooth with no visible grit remaining.

Pour batter into a bowl and stir in 1/4 cup vegetable oil, 1 crumbled vegetable bouillon cube, and 1/2 tsp salt until fully incorporated.

Divide batter evenly among greased heat-safe ramekins and cover tightly with foil.
