Nigerian Spicy Fried Chicken

Ingredients
- 3 lbs chicken pieces (thighs and breasts), patted dry
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tsp cayenne pepper
- 2 tsp smoked paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp ground ginger
- 1 tsp black pepper
- 1.5 tsp salt
- 1/2 tsp red chili flakes
- 2 cups vegetable oil

Marinate 3 lbs patted dry chicken pieces (thighs and breasts) in 2 cups buttermilk for at least 2 hours (or overnight) in the refrigerator.

Mix 2 cups all-purpose flour, 1 tsp cayenne pepper, 2 tsp smoked paprika, 2 tsp garlic powder, 2 tsp onion powder, 1 tsp ground ginger, 1 tsp black pepper, 1.5 tsp salt, and 1/2 tsp red chili flakes in a shallow bowl.

Remove chicken from buttermilk and coat thoroughly in the spiced flour mixture.

Heat 2 cups vegetable oil in a deep skillet or Dutch oven to 350°F.

Carefully add coated chicken to hot oil, working in batches to avoid overcrowding. Fry for 12-15 minutes until golden brown and internal temperature reaches 165°F.
