Nasi Campur
A traditional Indonesian rice platter featuring warm jasmine rice served alongside spiced shredded chicken, sambal eggs, fresh cucumber, and toasted peanuts.
Ingredients
- 2 cups jasmine rice, rinsed
- 1 lb boneless chicken breast, poached
- 4 eggs, hard-boiled
- 4 shallots, sliced
- 4 garlic cloves, minced
- 1 tsp ground turmeric
- 1/4 cup sambal oelek
- 2 tbsp coconut oil
- 1 cucumber, sliced
- 1/4 cup roasted peanuts

Cook 2 cups rinsed jasmine rice in double its volume of water until tender and fluffy.

Poach 1 lb boneless chicken breast in simmering water until internal temperature reaches 165 degrees F, then shred with two forks.

Heat 2 tbsp coconut oil in a large skillet over medium heat and sauté 4 sliced shallots and 4 minced garlic cloves for 2 minutes.

Stir in 1 tsp ground turmeric, 1/4 cup sambal oelek, and shredded chicken, cooking for 3 minutes until warm.

Add peeled 4 hard-boiled eggs to the skillet and toss in the warm sauce until evenly coated.

Scoop cooked rice into the center of plates, then arrange spiced chicken, eggs, 1 sliced cucumber, and 1/4 cup roasted peanuts around the edges.
