Nasi Kuning
A fragrant Indonesian rice cooked with coconut milk, ground turmeric, and aromatic leaves. It delivers a golden color and rich, herbal taste suitable for celebratory meals.
Ingredients
- 2 cups jasmine rice, rinsed
- 1 cup full-fat coconut milk
- 1.5 cups water
- 1 tsp ground turmeric
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves, bruised
- 1 pandan leaf, knotted
- 1 tsp fine sea salt

Combine 1 cup full-fat coconut milk, 1.5 cups water, 1 tsp ground turmeric, and 1 tsp fine sea salt in a medium saucepan over medium heat, whisking until smooth.

Add 2 bruised lemongrass stalks, 4 bruised kaffir lime leaves, 1 knotted pandan leaf, and 2 cups rinsed jasmine rice to the pot, then bring to a boil.

Reduce heat to low, cover tightly with a lid, and simmer for 15 minutes until the liquid is absorbed.

Remove from heat and let sit covered for 10 minutes, then discard the herbs and fluff with a fork.
