Pad Krapow Gai
Holy basil chicken stir-fry with a spicy-savory sauce. Quick-cooked minced chicken with fragrant Thai basil, garlic, and chili. Serve over jasmine rice with a fried egg.
Ingredients
- 2 lb ground chicken
- 2/3 cup fresh Thai basil, torn
- 8 garlic cloves, minced
- 4 chilies Thai bird's eye chilies, minced
- 1/4 cup fish sauce
- 2 tbsp soy sauce
- 2 tsp palm sugar or brown sugar
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- 4 cups jasmine rice (cooked)
- 4 eggs eggs

Heat 2 tbsp vegetable oil in a large wok or skillet over high heat. Add 8 minced garlic cloves and 4 chilies minced Thai bird's eye chilies, stirring for about 30 seconds until fragrant.

Add 2 lb ground chicken and stir-fry, breaking it up as it cooks, for 5-6 minutes until cooked through.

Stir in 1/4 cup fish sauce, 2 tbsp soy sauce, 2 tsp palm sugar or brown sugar, and 1/2 cup chicken broth. Stir well and cook for 1-2 minutes.

Remove from heat and gently fold in 2/3 cup torn fresh Thai basil.

Fry 4 eggs eggs in a separate pan until the whites are set but yolks are still runny.

Divide 4 cups jasmine rice (cooked) among serving bowls. Top each with a portion of the chicken mixture and a fried egg. Serve immediately.
