Pad Krapow Goong
Holy basil shrimp stir-fry with a spicy-savory sauce. Juicy shrimp combined with fragrant Thai basil, garlic, and chilies. Serve over jasmine rice with a fried egg.
Ingredients
- 2 lb large shrimp, peeled and deveined
- 2/3 cup fresh Thai basil, torn
- 8 garlic cloves, minced
- 4 chilies Thai bird's eye chilies, sliced
- 1/4 cup fish sauce
- 2 tbsp soy sauce
- 2 tsp brown sugar
- 2 tbsp lime juice
- 2 tbsp vegetable oil
- 4 cups jasmine rice (cooked)
- 4 eggs eggs

Heat 2 tbsp vegetable oil in a large wok or skillet over high heat. Add 8 minced garlic cloves and 4 chilies sliced Thai bird's eye chilies, stirring for about 20 seconds until fragrant.

Add 2 lb large shrimp, peeled and deveined and stir-fry for 2-3 minutes until they start to turn pink.

Stir in 1/4 cup fish sauce, 2 tbsp soy sauce, 2 tsp brown sugar, and 2 tbsp lime juice. Continue cooking for 1-2 minutes until shrimp are fully cooked and opaque.

Remove from heat and gently fold in 2/3 cup torn fresh Thai basil.

Fry 4 eggs eggs in a separate pan until the whites are set but yolks are still runny.

Divide 4 cups jasmine rice (cooked) among serving bowls. Top each with a portion of the shrimp mixture and a fried egg. Serve immediately.
