Ingredients

  • 2 lb duck breasts, sliced
  • 3 tbsp Thai red curry paste
  • 2 cans coconut milk
  • 2 tbsp fish sauce
  • 2 tsp palm sugar or brown sugar
  • 1/2 cup fresh Thai basil, torn
  • 2 peppers red bell pepper, sliced
  • 8 whole Thai eggplants, halved
  • 1 cup bamboo shoots
  • 2 tbsp vegetable oil

Instructions

    Heat 2 tbsp vegetable oil in a large pot or wok over medium-high heat. Add 3 tbsp Thai red curry paste and fry for 1-2 minutes until fragrant.

    Add 2 lb sliced duck breasts and cook for 3-4 minutes, stirring to coat with the curry paste.

    Pour in 2 cans coconut milk and stir well. Bring to a gentle simmer.

    Add 2 peppers sliced red bell pepper, 8 whole halved Thai eggplants, and 1 cup bamboo shoots. Simmer for 10-12 minutes until duck is cooked through.
