Pasta Carbonara with Peas
A classic pasta dish featuring crisp pancetta, tender peas, and a silky egg and Parmesan sauce. Perfect for a quick and satisfying dinner.
Ingredients
- 1 lb spaghetti
- 6 oz diced pancetta
- 4 large eggs, whisked
- 1 cup Parmesan cheese, grated
- 1 cup frozen green peas, thawed
- 1 tsp black pepper, cracked
- 1 tsp salt

Bring a large pot of water to a boil and add 1 tsp salt.

In a bowl, whisk together 4 whisked large eggs, 1 cup grated Parmesan cheese, and 1 tsp cracked black pepper until smooth.

Cook 1 lb spaghetti in the boiling water for 8 to 10 minutes until al dente, reserving 1/2 cup of pasta water before draining.

In a large skillet over medium heat, render 6 oz diced pancetta for 6 to 8 minutes until crispy and the internal temperature reaches 160 F, then stir in 1 cup thawed frozen green peas for 1 minute.

Remove the skillet from heat, add the hot pasta and reserved pasta water, then quickly stir in the egg mixture to create a creamy sauce.
