Pineapple Cake
Shortcrust pastry filled with a sweet and chewy homemade pineapple jam filling. A classic pastry popular for celebrations and gifts.
Ingredients
- 3 lbs fresh pineapple, chopped
- 6 tbsp granulated sugar
- 3 tbsp honey
- 3/4 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 2 egg yolks, beaten
- 2 cups all-purpose flour, sifted
- 3 tbsp milk powder

Cook 3 lbs chopped fresh pineapple, 6 tbsp granulated sugar, and 3 tbsp honey in a saucepan over medium heat for 35 minutes until thick and golden.

Cool the pineapple filling completely and divide into twelve equal portions.

Beat 3/4 cup softened unsalted butter and 1/4 cup powdered sugar together in a bowl until pale and fluffy.

Mix in 2 beaten egg yolks until fully incorporated.

Gently fold in 2 cups sifted all-purpose flour and 3 tbsp milk powder to form a soft dough.

Wrap dough portions around filling portions and press into rectangular cake molds.

Bake at 350 degrees F for 12 minutes, flip each cake, and bake for another 8 minutes until golden.
