Green Plantain Soup
A savory Cuban soup made from tender green plantains simmered in an aromatic broth with garlic and soft spices, then blended until silky smooth.
Ingredients
- 2 green plantains, peeled, sliced
- 2 tbsp olive oil
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 4 garlic cloves, minced
- 1 tsp ground cumin
- 4 cups chicken broth
- 1 tsp salt
- 2 tbsp fresh lime juice

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 chopped yellow onion, 1 chopped green bell pepper, and 4 minced garlic cloves, sautéing for 5 minutes until soft.

Stir in 1 tsp ground cumin, 2 peeled, sliced green plantains, 4 cups chicken broth, and 1 tsp salt.

Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until plantains are tender.

Transfer the soup to a blender in batches and blend until smooth.
