Fufu de Platano
A traditional Cuban side dish made from mashed green plantains combined with garlic, lime, stock, and crispy pork belly.
Ingredients
- 4 green plantains, sliced
- 1 lb pork belly, diced
- 6 garlic cloves, minced
- 2 tbsp extra-virgin olive oil
- 2 tbsp fresh lime juice
- 1/2 cup chicken broth
- 1 tsp salt

Place 4 sliced green plantains in a large pot, cover with water, and boil over medium-high heat for 20 minutes until tender.

Fry 1 lb diced pork belly in a skillet over medium heat for 10 minutes until crisp and the internal temperature reaches 145°F.

Remove pork belly from the skillet, leaving the rendered fat in the pan.

Add 2 tbsp extra-virgin olive oil and 6 minced garlic cloves to the pan fat and cook for 1 minute until fragrant.

Drain plantains and transfer them to a large bowl.

Add the cooked garlic oil mixture, 2 tbsp fresh lime juice, 1/2 cup chicken broth, and 1 tsp salt to plantains, then mash until smooth.

Fold crispy pork belly into the mashed plantains and serve warm.
