Rice and Peas
A classic dish featuring long grain rice simmered in creamy coconut milk with red kidney beans, thyme, and aromatic spices.
Ingredients
- 2 cups long-grain white rice
- 1 can canned red kidney beans, rinsed
- 1.5 cups unsweetened coconut milk
- 1.5 cups water
- 2 stems scallions, chopped
- 2 garlic cloves, minced
- 4 fresh thyme sprigs
- 6 berries whole allspice berries
- 1 pepper whole scotch bonnet pepper
- 1 tsp salt

Combine 1.5 cups unsweetened coconut milk, 1.5 cups water, 2 stems chopped scallions, 2 minced garlic cloves, 4 fresh thyme sprigs, 6 berries whole allspice berries, 1 pepper whole scotch bonnet pepper, and 1 tsp salt in a medium pot over medium-high heat.

Bring the liquid to a simmer and stir in 1 can rinsed canned red kidney beans and 2 cups long-grain white rice.

Cover with a tight lid, reduce heat to low, and cook for 20 minutes without lifting the lid.

Remove from heat and let sit covered for 5 minutes.

Discard fresh thyme sprigs, whole allspice berries, and whole scotch bonnet pepper, then fluff long-grain white rice with a fork before serving.
