Jerk Pork Chops
Spicy and aromatic Jamaican-style pork chops marinated in jerk seasoning with allspice, scotch bonnet, and thyme.
Ingredients
- 2 lbs pork chops (1.5 inches thick)
- 2 tsp allspice berries, crushed
- 1/2 Scotch bonnet pepper, seeded and chopped
- 2 tbsp fresh thyme, chopped
- 2 tsp ginger root, minced
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

In a food processor, combine 2 tsp crushed allspice berries, 1/2 seeded and chopped Scotch bonnet pepper, 2 tbsp chopped fresh thyme, 2 tsp minced ginger root, and 2 minced garlic cloves. Pulse until a paste forms.

Add 2 tbsp soy sauce, 2 tbsp lime juice, and 2 tbsp olive oil to the paste and pulse until combined.

Pat 2 lbs pork chops (1.5 inches thick) dry and season with 1/2 tsp salt and 1/4 tsp black pepper.

Coat both sides of the pork chops generously with the jerk paste.

Let marinate for at least 15 minutes, or up to 4 hours in the refrigerator.

Preheat grill to medium-high heat.

Grill the pork chops for 8-10 minutes per side until internal temperature reaches 145°F.
