Salmon and Cucumber Salad
Pan-seared salmon flaked over crisp cucumbers and red onion in a bright lemon dill dressing. A light and refreshing salad full of clean flavor.
Ingredients
- 1 lb salmon fillets
- 1 tbsp olive oil
- 1 English cucumber, thinly sliced
- 1/2 cup red onion, thinly sliced
- 2 tbsp fresh dill, chopped
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper, cracked

Heat 1 tbsp olive oil in a skillet over medium-high heat.

Season 1 lb salmon fillets with half of the 1/2 tsp salt and 1/4 tsp cracked black pepper, then sear for 3 to 4 minutes per side until internal temperature reaches 145°F.

Remove salmon from heat and flake into bite-sized pieces.

In a large bowl, whisk together 2 tbsp lemon juice, 1 tsp Dijon mustard, remaining 1/2 tsp salt, and remaining 1/4 tsp cracked black pepper to form a dressing.

Toss 1 thinly sliced English cucumber, 1/2 cup thinly sliced red onion, and 2 tbsp chopped fresh dill in the dressing, then gently fold in flaked salmon fillets and serve.
