Split Pea and Ham Soup
A classic hearty soup slow cooked with green split peas, aromatic vegetables, and rich smoked ham hock.
Ingredients
- 1 lb smoked ham hock, rinsed
- 2 cups green split peas, rinsed
- 1 yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 6 cups chicken stock
- 2 bay leaves
- 1 tsp dried thyme
- 1/2 tsp black pepper

Add 6 cups chicken stock, 2 cups rinsed green split peas, 1 lb rinsed smoked ham hock, 1 diced yellow onion, 2 diced carrots, 2 diced celery stalks, 4 minced garlic cloves, 2 bay leaves, and 1 tsp dried thyme to a large pot.

Bring to a boil over medium-high heat, then lower heat to low, cover, and simmer for 70 minutes until peas break down.

Remove smoked ham hock and bay leaves from the soup pot.

Shred meat from smoked ham hock, return meat to pot, and ensure internal temperature of meat reaches 165°F.

Stir in 1/2 tsp black pepper and simmer 5 minutes before serving.
