Spiced Fish Cakes

Ingredients
- 14 oz canned mackerel or tuna, drained, flaked
- 12 oz potatoes, boiled and mashed
- 1/4 cup onion, finely diced
- 1 clove garlic, minced
- 1/4 tsp fresh ginger, minced
- 2 tbsp fresh parsley, chopped
- 1 large eggs, beaten
- 1/2 cup panko breadcrumbs
- 1/2 tsp paprika
- 1/8 tsp cayenne pepper
- 1/4 tsp ground cumin
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 cup vegetable oil

In a bowl, combine 14 oz flaked canned mackerel or tuna, drained, 12 oz boiled and mashed potatoes, 1/4 cup finely diced onion, 1 clove minced garlic, 1/4 tsp minced fresh ginger, and 2 tbsp chopped fresh parsley.

In a small bowl, mix 1/2 tsp paprika, 1/8 tsp cayenne pepper, 1/4 tsp ground cumin, 1/4 tsp salt, and 1/8 tsp black pepper. Add to fish mixture and stir well.

Bind the mixture with 1 beaten large eggs. If too wet, add 1 tablespoon of breadcrumbs at a time.

Shape into 8 patties (each about 2 inches wide). Coat each patty in 1/2 cup panko breadcrumbs.

Heat 1 cup vegetable oil in a skillet over medium-high heat. Fry fish cakes for 3-4 minutes per side until golden brown.
