Sopa de Ervilha
A comforting Brazilian split pea soup simmered with crisp bacon and smoky sausage. It yields a creamy, hearty broth packed with savory flavor.
Ingredients
- 2 cups green split peas, rinsed
- 4 oz bacon, chopped
- 1 cup calabresa sausage, sliced
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 1 tbsp olive oil
- 2 bay leaves
- 6 cups water
- 1 tsp salt
- 1/2 tsp black pepper

Heat 1 tbsp olive oil in a large pot over medium heat.

Add 4 oz chopped bacon and 1 cup sliced calabresa sausage, cooking for 6 minutes until crispy and the sausage reaches an internal temperature of 160°F.

Add 1 diced yellow onion and 4 minced garlic cloves, sautéing for 3 minutes until softened and fragrant.

Stir in 2 cups rinsed green split peas, 6 cups water, 2 bay leaves, 1 tsp salt, and 1/2 tsp black pepper.

Bring to a boil, then reduce heat to low, cover, and simmer for 40 minutes until split peas break down into a thick soup.
