Ingredients

  • 4 oz bacon, chopped
  • 1/2 yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 cans red beans (canned), drained and rinsed
  • 2 cups corn kernels (fresh or frozen)
  • 1.5 cups white rice (long-grain)
  • 3 cups beef broth
  • 2 tbsp butter
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro (optional), chopped

Instructions

  1. 1

In a large pot over medium heat, cook 4 oz chopped bacon until crispy. Remove and set aside, leaving 1 tablespoon of fat in the pot.

  2. 2

Add 1/2 finely diced yellow onion to the pot and sauté 3 minutes until softened. Add 2 cloves minced garlic and cook 1 more minute.

  3. 3

Stir in 1.5 cups white rice (long-grain) and toast for 2 minutes, stirring constantly until slightly translucent at edges.

  4. 4

Pour in 3 cups beef broth and bring to a boil. Reduce heat to low, cover, and simmer 18-20 minutes until rice is tender and liquid is absorbed.

  5. 5

Add 2 cans drained and rinsed red beans (canned), 2 cups corn kernels (fresh or frozen), 2 tbsp butter, cooked bacon, 1/2 tsp sea salt, and 1/4 tsp black pepper.

  6. 6

Stir gently and cook uncovered 5 more minutes until vegetables are heated through. Do not overstir, as this breaks the rice.

  7. 7

Remove from heat and let rest 2 minutes. Taste and adjust seasoning.

  8. 8

Fluff with a fork and transfer to a serving dish. Garnish with 1/4 cup chopped fresh cilantro (optional) if desired.

Questions

Can I make Baião de Dois dairy-free?

Yes. The dairy in this entry is 2 tbsp butter. Swap the butter for olive oil where it melts, or a plant-based block butter where it is creamed. The richness shifts slightly, but the method does not change.

How long does Baião de Dois keep?

Refrigerate leftovers within two hours and eat them within three days. Reheat gently on the stovetop.

Can I halve or double Baião de Dois?

Yes. As written it serves 6. Every ingredient in this entry carries precomputed half and double quantities, and the app's batch dial rewrites them inside each step. When doubling on the stovetop, use your widest pan or work in two batches so the food sears instead of steaming.
