Sopa de Legumes com Carne
A traditional Brazilian vegetable and beef soup packed with tender root vegetables, chayote, and seared beef chuck in a rich savory broth.
Ingredients
- 2 tbsp extra-virgin olive oil
- 1 lb beef chuck roast, cubed
- 1 cup yellow onion, diced
- 4 garlic cloves, minced
- 6 cups beef broth
- 1 cup carrots, diced
- 2 cups Yukon Gold potatoes, diced
- 1 cup chayote squash, diced
- 1 cup green beans, chopped
- 1 tsp salt
- 1/4 cup fresh parsley, chopped

Heat 2 tbsp extra-virgin olive oil in a large pot over medium heat.

Add 1 lb cubed beef chuck roast and sear until browned on all sides and internal temperature reaches at least 145°F, about 8 minutes.

Add 1 cup diced yellow onion and 4 minced garlic cloves, cooking for 3 minutes until soft and fragrant.

Pour in 6 cups beef broth and bring to a simmer.

Add 1 cup diced carrots, 2 cups diced Yukon Gold potatoes, 1 cup diced chayote squash, 1 cup chopped green beans, and 1 tsp salt.

Cover and cook for 25 minutes until all vegetables are tender.

Stir in 1/4 cup chopped fresh parsley right before serving.
