Tacu Tacu
A pan-fried Peruvian rice and bean cake seasoned with garlic and yellow chili paste cooked until golden and crispy.
Ingredients
- 2 cups cooked canary beans, mashed
- 2 cups cooked white rice
- 1 cup red onion, diced
- 2 garlic cloves, minced
- 2 tbsp aji amarillo paste
- 2 tbsp vegetable oil
- 1/2 tsp salt

Heat 2 tbsp vegetable oil in a large skillet over medium heat.

Add 1 cup diced red onion, 2 minced garlic cloves, and 2 tbsp aji amarillo paste to the skillet, sauteing for 5 minutes until softened.

In a bowl, combine 2 cups mashed cooked canary beans, 2 cups cooked white rice, and 1/2 tsp salt with the cooked onion mixture until well blended.

Transfer the mixture back into the skillet and press it into a smooth oval patty.

Cook for 5 to 7 minutes per side until the exterior is golden and crispy.
