Ingredients

  • 4 red beets, diced
  • 2 russet potatoes, diced
  • 2 carrots, diced
  • 2 tbsp lime juice
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 2 tbsp fresh cilantro, chopped
