Soft Tofu Stew
A fiery, comforting stew packed with extra soft tofu, pork belly, and scallions simmered in a savory chili broth.
Ingredients
- 4 oz pork belly, sliced thin
- 1 tbsp toasted sesame oil
- 2 tbsp Korean chili flakes
- 2 cloves garlic, minced
- 2 cups anchovy stock
- 1 tbsp soy sauce
- 1 tube extra soft silken tofu
- 2 stalks scallion, chopped

Heat 1 tbsp toasted sesame oil in a pot over medium heat, then add 4 oz sliced thin pork belly and stir-fry until fully cooked to 160°F.

Add 2 cloves minced garlic and 2 tbsp Korean chili flakes, stirring constantly for 1 minute until fragrant.

Pour in 2 cups anchovy stock and 1 tbsp soy sauce, bringing the mixture to a boil.

Add 1 tube extra soft silken tofu in large spoonfuls, gently simmer for 5 minutes, and garnish with 2 stalks chopped scallion before serving.
