Stilton and Broccoli Soup
A velvety British soup combining tender simmered broccoli with the rich, tangy bite of Stilton cheese. It offers a cozy balance of savory flavors and creamy texture.
Ingredients
- 2 tbsp unsalted butter
- 1 yellow onion, chopped
- 2 celery stalks, chopped
- 5 cups broccoli florets and stems, chopped
- 4 cups vegetable broth
- 6 oz Stilton cheese, crumbled
- 1/2 cup heavy cream
- 1/4 tsp black pepper

Melt 2 tbsp unsalted butter in a large pot over medium heat.

Add 1 chopped yellow onion and 2 chopped celery stalks, cooking for 5 minutes until soft.

Add 5 cups chopped broccoli florets and stems and 4 cups vegetable broth, bring to a boil, then simmer for 15 minutes until broccoli is tender.

Purée the soup using a blender until smooth.

Return soup to the pot on low heat, then stir in 6 oz crumbled Stilton cheese, 1/2 cup heavy cream, and 1/4 tsp black pepper until cheese melts.
