  • 2 lg cans Canned diced tomatoes (28 oz can)
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Vegetable stock
  • 2 tbsp Butter
  • 1/2 cup Heavy cream
  • 1 tsp Sugar
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh basil, chopped

Instructions

    Heat 2 tbsp Butter in a large pot over medium heat. Add 1 medium diced Yellow onion and cook until softened, about 4 minutes.

    Add 2 cloves minced Garlic and cook for 1 minute until fragrant.

    Pour in 2 lg cans Canned diced tomatoes (28 oz can) (with juice) and 2 cups Vegetable stock.

    Bring to a simmer and cook for 15 minutes to allow flavors to meld.

    Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender in batches.

    Stir in 1/2 cup Heavy cream.

    Season with 1 tsp Sugar, 1/2 tsp Salt, and 1/4 tsp Black pepper to taste.

    Heat through but do not boil.
