Berry Almond Bircher Muesli
Creamy Swiss-style overnight oats soaked in apple juice and layered with fresh berries, sliced almonds, and a touch of honey. Plan ahead: soak overnight in the refrigerator.

- 1/2 cup low-fat plain Greek yogurt
- 2 tsp honey
- 2 tsp fresh lemon juice
- 1/4 tsp ground cinnamon
- 1 cup mixed fresh berries (blueberries, raspberries, sliced strawberries)
- 1/4 cup sliced almonds
- 1 medium apple (any variety), grated
Instructions
-
1
In a medium bowl or jar, stir together 1 cup old-fashioned rolled oats, 1 cup unsweetened apple juice (or apple cider), 1/2 cup low-fat plain Greek yogurt, 2 tsp honey, 2 tsp fresh lemon juice, and 1/4 tsp ground cinnamon until combined.
-
2
Fold in 1 grated medium apple (any variety) so it is evenly distributed throughout the oat mixture.
-
3
Cover and refrigerate overnight or for at least 6 hours until the oats have fully absorbed the liquid and become soft and creamy.
-
4
When ready to serve, give the muesli a good stir. If it is too thick, loosen with a splash of apple juice or water.
