Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup unsweetened apple juice (or apple cider)
  • 1/2 cup low-fat plain Greek yogurt
  • 2 tsp honey
  • 2 tsp fresh lemon juice
  • 1/4 tsp ground cinnamon
  • 1 cup mixed fresh berries (blueberries, raspberries, sliced strawberries)
  • 1/4 cup sliced almonds
  • 1 medium apple (any variety), grated

Instructions

    In a medium bowl or jar, stir together 1 cup old-fashioned rolled oats, 1 cup unsweetened apple juice (or apple cider), 1/2 cup low-fat plain Greek yogurt, 2 tsp honey, 2 tsp fresh lemon juice, and 1/4 tsp ground cinnamon until combined.

    Fold in 1 grated medium apple (any variety) so it is evenly distributed throughout the oat mixture.

    Cover and refrigerate overnight or for at least 6 hours until the oats have fully absorbed the liquid and become soft and creamy.

    When ready to serve, give the muesli a good stir. If it is too thick, loosen with a splash of apple juice or water.

    Divide into bowls and top each serving with 1 cup mixed fresh berries (blueberries, raspberries, sliced strawberries) and 1/4 cup sliced almonds. Drizzle with a little extra honey if desired.
