Raclette
Melted cheese scraped onto warm potatoes, bread, and cured meats. A warming Alpine dish perfect for winter gatherings.
Ingredients
- 1.5 lbs Raclette cheese (in block)
- 2 lbs Waxy potatoes, cooked and halved
- 1 lb Crusty bread, sliced
- 8 oz Swiss prosciutto or cured ham, sliced thin
- 1/2 cup Cornichons (pickled gherkins)
- 8 oz Pearl onions or small onions, peeled
- 1/4 tsp Black pepper

Heat the 1.5 lbs Raclette cheese (in block) block in front of a heat source (a raclette grill or your oven broiler) until the surface is soft and melted.

Scrape the melted cheese onto a plate using a knife or spatula.

Place a warm 2 lbs cooked and halved Waxy potatoes on a plate. Top with scraped cheese.

Serve alongside 8 oz sliced thin Swiss prosciutto or cured ham, 1/2 cup Cornichons (pickled gherkins), and 8 oz peeled Pearl onions or small onions.

Season with 1/4 tsp Black pepper to taste.

Repeat the process, allowing guests to build their plates as desired.
